  1. Hulda’s recipe for Swedish Cookies

    2 Eggs
    1 Cup White Sugar
    1 Cup Brown Sugar
    A little salt
    1.5 Cups butter
    4 Cups Flour
    1 Teaspoon Baking Soda
    1-2 Teaspoons Water
    2 Cups Chopped Walnuts

    Beat eggs until fluffy, add sugar and salt
    Add butter, flour, baking soda, nuts and water
    Use hands to mix dough
    Store in refrigerator over night after lining and shaping pan with wax paper leaving extension over sides.
    Press firmly into pan , leave no air spaces
    Oven 350 degrees farenheit
    Cut dough into 1/16″ slices
    Bake until light brown

  2. Hulda’s Recipe for Almond Lace Wafers

    .75 Cups Grated Unblanched Almonds
    .5 Cups Butter (1 Stick)
    .5 Cups Sugar
    1 Tablespoon Flour
    1 Tablespoon Heavy Cream
    1 Tablespoon Milk

    Oven 350 degrees Farenheit
    Grease and Flour 6 cookie sheets at a time

    Chop almonds and mix with all remaining ingredients in a sauce pan
    Cook over low heat, stirring constantly until butter is melted
    Drop by Tablespoonful on cookie sheet (2 or 3 per sheet)
    Bake 7 – 9 minutes or until light caramel color, still bubbling in the middle
    Let cool 1 minute – timing is tricky – wait too long and they stick to the sheet, too little and they will not lift
    Transfer to paper towel top side down
    Roll over handle of wooden spoon to form tube shape
    May need to regrease/flower cookie sheets between cookies
    Only work with one sheet at a time by staggering baking times
